Collymoon Craft is the brainchild of Nicola Finney, who had a long-held dream of launching her own gin and spirits brand. In 2022, Nicola took the first step of registering her company and spent the next 18 months learning about foraging and botanicals, flavour profiles, and the distillation process, along with putting herself through distillation training courses so when the time was right to launch her signature Gealach Úr Scottish Dry Gin, she could get off to the best possible start.
Based in the Port Of Menteith, Nicola hopes to one day open the Collymoon Craft Distillery. Currently, she uses the stills and equipment at Distillutions in Arbroath, Angus, to cuckoo her signature gin. Nicola’s family have encouraged and supported her dream of launching Collymoon Craft, especially tasting and providing feedback about recipe development.
Gealach Úr Scottish Dry Gin is the signature release from Collymoon Craft and features a classic gin botanical lineup, along with some locally foraged botanicals. Juniper, corriander seeds, angelica root, liquorice root, cassia bark, orange and lemon peel provide all the classic elements with the addition of golden berries and pink peppercorns. Locally foraged botanicals include hawthorn berries, honeysuckle flowers and fennel. The flavour profile encompasses classic juniper, citrus, earthiness, and spice with layers of florals and herbaceous notes.
