A’Gin is exclusive to North Port Restaurant in Perth. The modern Scottish restaurant is run by a local couple, Andrew and Karen, who proudly source produce almost entirely from Scotland. They keep things simple and don’t overcomplicate flavours, opting to use three or four flavours in various forms in each dish and this is what they wanted to replicate with their own house gin.
Using the same ethos as the restaurant kitchen, not counting juniper, which of course is the essential botanical in our gin, there are only four other botanicals in A’Gin: sweet cicely, nettle, lemon balm and sorrel. Andrew and Karen worked very closely with Simon at Persie Distillery to create A’Gin. All the team in the restaurant were involved at some point in the process too, everything from the initial tasting and balancing of the flavours to bottling and labelling.
Sweet cicely, nettles, lemon balm and sorrel are all hand picked from around Perth and join juniper in the final distillation. These botanicals have been balanced in a way to create a smooth, crisp gin with a slight sweetness to it. A'Gin is available by the bottle only from North Port Restaurant.
