Husband and wife Hamish and Liberty Martin purchased a derelict plot of land in the Pentland Hills on the outskirts of Edinburgh in 2011. Over several years the couple transformed the unloved space into a garden which is home to over 600 herbs, a shop, a cafe and an educational space. Hamish, a former wine merchant with a diploma in Herbology, and Liberty, a former Resource Manager, teamed up with staff member Steve Ross, an experienced mixologist to create a diverse range of gins that used some of the botanicals from their Secret Herb Garden.

Setting up the The Old Curiosity Distillery in 2017, the team set to work developing recipes that utilised a fine range of botanicals. With the botanical combinations established, a magical surprise from Mother Nature – when Hamish and Steve added tonic water – the gin changed colour!

Apothecary Rose Gin

The wonders of Mother Nature never fail to astound and amaze. The same can be said of the Apothecary Rose Gin with its floral notes of roses and ability to change colour when mixed with tonic, changing from a light sepia colour to a vibrant fuchsia pink. The Secret Herb Garden does not use any chemicals, not even organic ones, to grow their flowers, meaning that the beautiful aroma and taste are 100% natural and infused from the distillation process.

Lavender & Echinacea Gin

Lavender has been used for centuries as a cure for various ailments. Known for it’s restorative qualities and ability to cure ails, the lavender adds fresh, floral scented perfumed notes to this Lavender and Echinacea Gin. The echinacea is a herbaceous flowering daisy with delicate petals and a sweet scent. This gin also has some of Mother Nature’s wonder with it’s ability to change colour when mixed with tonic, changing from a light inky blue to an effervescent lilac colour.

Chamomile & Cornflower Gin

Wild Chamomile is noted as being a vulnerable species and currently faces a risk of extinction in the wild. The Chamomile used in this Chamomile and Cornflower Gin is seeded, planted and nurtured in the Secret Herb Garden. Providing fresh and floral notes, the Chamomile stirs memories of long summers spent outdoors. The cornflower not only adds an additional layer of flavour but also infuses the gin with it’s light blue colour, which changes to a rich purple when tonic is added.

Geranium & Mallow Gin

Splash a little tonic into the limited edition Geranium & Mallow Gin and this nearly clear spirit miraculously turns a delicate pink. Frequently used in herbal medicine, mallow flowers curl up into an impenetrable bud and open only when the sun shines. The accompanying addition of geranium flowers during distillation creates tropical notes and nuances of matcha, rose and jasmine resulting in a rich, smooth and headily floral gin.

Damask Rose Gin

Splash a little tonic into the limited edition Damask Rose Gin and this faintly golden spirit miraculously turns a warm petal pink. Now used to make rose water, ras el hanout and oil for perfumes, the Damask rose was brought to the UK from the Middle East by the Crusaders. It’s known for its immensely heady fragrance, enjoyed for millennia by everyone from Shakespeare to Hamish, who harvests the 30-petalled flower to make this gin.

Distillery

The Old Curiosity Distillery

The distilling, bottling and labelling all take place on-site at the distillery which is located in the rolling green landscape of the Lothianburn on the outskirts of Edinburgh. Many of the botanicals that are used in the gins produced at the The Old Curiosity Distillery are grown on-site at the secret herb garden. Flowers are hand-picked and dried by a team of dedicated gardeners led by Scottish herbologist Hamish Martin. The distillery itself can be found in a repurposed outbuilding that houses not only the custom-built copper pot still but also the vast array of dried flowers, botanicals and more. With over a thousand juniper bushes, the distillery hopes to one day be entirely reliant on the gardens for all its botanicals.
