Distilled and bottled at 47% ABV, Whitetale Gin is a juniper forward gin that balances botanicals locally foraged from the island including heather, winter savoury, pine needles and sea kelp along with classic gin botanicals including juniper, coriander and lemon peel.
Whitetail Spirits was inspired by the majestic White Tailed Sea Eagles that inhabit the Inner Hebridean Isle of Mull, home to the Whitetail Spirits Distillery. In June 2019, the Whitetail Spirits team brought production of their gin back to the Isle of Mull. Their gin had been distilled outside of Scotland up until this point but it was always part of the plan to bring it back to its real home. Being situated on the Tiroran Estate has enabled the team to forage and source a variety of wild local botanicals from the island including winter savoury, pine needles and sea kelp from the shores of Loch Scridain.
London Dry Gin
London Dry Gin is both a flavour profile and a production method. London Dry Gins tend to follow the traditional, classic flavour of piney juniper, citrus and spice. Alongside juniper, botanicals in London Dry Gin often include orris root, angelica root, cassia bark, citrus peel and coriander, among the core botanicals. The result is a dry gin that features piney juniper along with bursts of citrus and warming spice and earthy, dry notes from use of botanicals such as cassia bark and coriander. Nothing synthetic can be added like flavourings or colours and nothing can be added post distillation apart from water and a tiny amount of sugar meaning all flavours come from distillation.
The Whitetail Spirits Distillery is housed on the Tiroran Estate and this move back home to Mull in 2019 not only marked a significant milestone for the Whitetail Spirits brand and team but signalled a new chapter in the story of distilling on the Isle of Mull. The distillery is only the second legal distillery on the island and the first new distillery for 220 years.
