Sutors Gin is distilled with an ethanol base spirit created using their own grains, which have been carefully grown under the watchful care of agronomist and co-founder Ed. Unlike some other grain to glass gins, the team at Sutors Gin planted and grew the grain before distilling to create the base alcohol for Sutors Gin. Distilled using vapour infusion, the gin features a number of botanicals from the local area from seashore to hillside, river to ocean. Scottish Juniper and sea buckthorn, along with other botanicals have been carefully foraged before being distilled with the base spirit and fresh water sourced from a nearby spring. The flavour profile is described as juniper forward with herbaceous notes along with a burst of citrus from the sea buckthorn before blending into a slightly spicy, warming, lingering finish.
Sweet and creamy, cereal notes, opening up to vegetal and herb flavours with rosemary, aniseed and an almost cucumber freshness, leading to big, bitter citrus, like burnt lemon and grapefruit peel, with a heavy juniper presence

Ed Scaman and Stuart Wells, the co-founders of Sutors Gin, first mentioned creating a 100% Scottish Gin made with a base spirit distilled in Scotland from local grain along with local Scottish botanicals in 2016. Sin then the team have been on a pretty exciting Scottish Gin journey. First securing a loyal following through their Sutors Gin 500 Club, which saw the first 500 bottles allocated to the first 500 customers. Although development of the final recipe was in hand, the team still had to source larger quantities of local botanicals and grow and nurture the crops that would be used to create their base spirit. Once they had achieved all this, Sutors Gin was officially launched in October 2019.
London Dry Gin
London Dry Gin is both a flavour profile and a production method. London Dry Gins tend to follow the traditional, classic flavour of piney juniper, citrus and spice. Alongside juniper, botanicals in London Dry Gin often include orris root, angelica root, cassia bark, citrus peel and coriander, among the core botanicals. The result is a dry gin that features piney juniper along with bursts of citrus and warming spice and earthy, dry notes from use of botanicals such as cassia bark and coriander. Nothing synthetic can be added like flavourings or colours and nothing can be added post distillation apart from water and a tiny amount of sugar meaning all flavours come from distillation.
Nautilus Gin Foundry, home to Sutors Gin, is tucked away amongst wheat and barley fields on top of a small hill overlooking the mountains of Sutherland. The distillery is housed in a former farm building, renovated by owners Ed Scaman and Stuart Wells. The team locally grow, forage and distil everything that goes into their spirits, working with local farmers to develop the best grains for their base spirit and foraging responsibly for the best quality Scottish Highland botanicals.
