Using the Asian Butterfly pea botanical, which is commonly used in medicinal teas to naturally colour and slightly sweeten the Gin. It is a vibrant blue colour but when tonic is added the gin enchantingly changes to a gorgeous lilac colour.

About
Ellis Gin was initially created in late 2016 by founder Carol Jackson as the base for the highly successful Gin&Mix cocktails. The gin evolved over a period of 18 months and Ellis Gin officially launched in September 2018 with two naturally flavoured, coloured gins, which enchantingly change colour when mixer is added. Since then, the brand has gone on to create and release a range of fun, coloured and flavoured gins, all with juniper at their heart.
Distilled Gin
Distilled Gins are similar to London Dry Gins, except natural or artificial flavourings can be added after the distillation process. The flavours can vary greatly and some gins can often cross over to other gin styles, for example where sugars have been added to created an Old Tom style gin or maceration with fruit to create a Flavoured Gin. Some Distilled Gins also follow the London Dry style to the letter but go on to include additional botanical/s to their gin post-distillation and therefore can’t be classed as a London Dry Gin. Distilled Gin is sometimes referred to as Contemporary, New American, New Western or International style gin.
Production
Ellis Gin is distilled by production partner Illicit Spirits in a hidden railway arch in Glasgow, produced in small batches but big in flavour in a 100 litre copper still. Ellis is a real family affair, named affectionately after Carol’s daughter, with each bottle hand bottled, hand labelled, hand sealed and individually numbered by the family team.
