A clean, zesty, juniper-forward gin which balances softness with bright citrus. Launched in 2010, this is Edinburgh Gin’s modern London Dry, with a nod to Scotland in its recipe including native plants and botanicals. A unique blend of 14 botanicals includes lavender, pine buds, mulberries and cobnuts. Orange peel, lemongrass and lime peel contribute lively citrus notes. This is a delightfully crisp gin with a distinctively smooth finish.

London Dry Gin
London Dry Gin is both a flavour profile and a production method. London Dry Gins tend to follow the traditional, classic flavour of piney juniper, citrus and spice. Alongside juniper, botanicals in London Dry Gin often include orris root, angelica root, cassia bark, citrus peel and coriander, among the core botanicals. The result is a dry gin that features piney juniper along with bursts of citrus and warming spice and earthy, dry notes from use of botanicals such as cassia bark and coriander. Nothing synthetic can be added like flavourings or colours and nothing can be added post distillation apart from water and a tiny amount of sugar meaning all flavours come from distillation.
The production of the Edinburgh Gin expressions is spread over two unique distillery sites in Edinburgh. Heads & Tales is both a bar and home two stills, Flora and Caledonia. Both stills are used to distil a variety of Edinburgh Gin expressions. The second production site is housed in the Biscuit Factory, located a few miles away in Leith. The distillery in The Biscuit Factory houses a large 1000 litre traditional copper pot Hoga Still. The site also features a number of smaller stills, which are used for recipe creation and development before being upscaled at either The Biscuit Factory or Heads & Tales.
