In 2011, armed with a pressure cooker and some old central heating pipes, Vivienne and Steven Muir, husband and wife, cobbled together a makeshift gin still in their kitchen. With their trusty DIY still they were able to test hundreds of different recipes and various botanicals until they had a recipe they were happy with. From here they were granted a licence and the kitchen of their sea side home in North Berwick became an official ginnery.
They purchased a desktop lab still and began the process of distillation, refinement, distillation, refinement over thousands of hours until they had created their perfect gin. And finally, they commissioned the world’s oldest and most revered still-makers John Dore to make them a custom gin still, built to their exact specifications with no pressure cooker in sight.
