Lundin Distilling was set-up with one goal – to distil and produce original, high quality, hand-crafted spirits in Fife. Using a still imported from the moonshining heartland of Alabama, USA, the team set to work trialling their recipe. The team knew what they wanted but needed something unique to their gin – something that grew locally and could be easily foraged without leaving any long-term damage to the local area.
The team struck gold when they used a local flower that was growing in abundance – gorse, a wild flowering plant with golden yellow flowers and an incredible scent which heralds the arrival of the fleeting Scottish summer.
This small batch gin made in Fife is created using 18 botanicals including two types of juniper, both a sweet and rich variety, elderflower, chamomile, caraway, grapefruit, bitter orange, cinnamon and locally-foraged Fife gorse. On the palate, upfront juniper with sherbet. The gorse adds bison-grass and honey, which then lead into a fusion of fruit flavours including apple, pear and mango. Finally the gin eases into a wonderfully long finish of dark chocolate and bitter orange with a hint of white pepper.

This second release gin has been a long time in the making with several tweaks and redesigns to get the gin just right. Described as “pretty grown-up and undoubtedly juniper-y” it also boasts a slightly sweeter and fruitier taste with the addition of strawberries and raspberries post-distillation. The base gin is lighter in style than Lundin's signature Gorse Gin and substitutes some of the traditional spices for more floral botanicals.
