

The Eden Mill story started with a mission to revive the lost art of distilling and brewing in St Andrews. As Scotland’s first single-site distillery and brewery, making gin, whisky and beer, Eden Mill spirit is created by their distillers in copper pot-stills and exhibits a wide range of flavours from botanicals sourced from the local area, as well as from around the world. As creators of craft gin, whisky and beers, the team of distillers have the opportunity to marry the best practices from all these disciplines.
The Eden Mill team is challenged with applying modern techniques and understanding to time honoured traditional methods. An appreciation of the intricacies of barrel ageing and quality wood is one benefit they enjoy from this special status. They apply this in order to develop truly innovative creations, such as their bourbon-aged Oak Gin.
Part of the Eden Mill Heritage Gin range of Scottish Gin expressions, Eden Mill Original Gin is a classic London Dry. Made from Fife’s sea buckthorn berries, a super food that grows within walking distance of the Eden Mill Distillery & Brewery. The unique tart berry flavour is abundant but they balance the gin around it using citrus elements drawn from the other botanicals, like lemon balm and citrus peel. Original Gin has a very clean and sweet taste.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Love Gin is a sweet and floral gin expression, created to capture the magic of love and the classic love botanical - the rose. Combining local botanicals including rose and raspberry along with a number of international botanicals including Goji Berries, the result is the a gin that has notes of sweet vanilla, red berry and rich florals.

Part of the Eden Mill Heritage Gin range of Scottish Gin expressions, Eden Mill Golf Gin is a botanically rich spirit that incorporates botanicals that can be spotted around local grassland and coastal golf courses in Scotland. Inspired by the ocean view of St Andrews Links, Eden Mill Golf Gin was created with seaweed base and fresh pine, two botanicals used that will transport the drinker to the windswept coastal fairways of Scotland’s golf courses. The addition of quintessentially Scottish heather adds a floral undertone to the gin.

The passion fruit is both bright, juicy and sweet tempered by the earthiness of coconut. The orange adds an additional layer of both sweetness and tartness to the gin.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Eden Mill Forager Gin takes its inspiration from the wild hedgerows that can be found across the Scottish landscape. Distilled using a variety of key botanicals that can be found in hedgerows, Forager Gin puts fruit and berries at the heart of the gin. Raspberry, strawberry and gooseberry feature to create a gin that’s filled with sweet, slightly tart berry flavours. Rich and juicy, similar in taste to a homemade jam with all the bits, the gin has a deep and lingering berry character.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Forbidden Gin is a fresh, juicy and sweet gin. Apple, pear and coriander form some of the key botanicals that feature in the gin along with quince. Quince is said to be one of the earliest known fruits, some even say it wasn’t an apple that was stolen and consumed in the Garden of Eden but a Quince. Fruity, clean and fresh on the nose with lovely apple, pear and quince notes, on the palate the gin still features juniper in the mix along with the bright, green freshness of the apple, pear, quince and some subtle warmth on the finish.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Golden Lore Gin was inspired by the tale of a saint who would throw gold coins down the chimneys of those in need. Rich in gold and spirit, the same can be said for Golden Lore Gin, golden orange in colour and rich in flavour, and best shared. Featuring tangerine, cranberry and coriander as key botanicals, the result is a gin that is bright, bold and fruit-filled on the nose with rich orange. On the palate, the gin features citrus and berry sweetness, with zesty orange notes which mellow into tart cranberry to create a balance of sweet and sour.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Neptune Gin takes its name from the Roman god of the sea and along with its namesake key botanical sea kelp, also know as Neptune’s belt. Along with sea kelp, a type of seaweed, other key botanicals include samphire, a type of succulent plant that’s salt tolerant and found along coastal regions. Kombu is another type of kelp, predominantly found in Asia. The final key botanical is sea salt. The result is a flavour profile that’s rich, fresh and herbaceous with a careful balance of salinity and some brininess.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Nine Islands Gin was inspired by the chain of nine islands that form The Similan Islands. Located in the Andaman Sea off the coast of, and part of, Phang Nga Province in southern Thailand, each island is its own mini paradise with crystal clear waters, leafy green forests and golden sands. Using a variety of botanicals normally found in Thai cuisine, the gin is zesty and aromatic. Lime and lemongrass are used in the distillation to create a bright, zingy gin that’s peppered with coriander spice from the use of coriander leaf also adding a herbal note on the palate.

Part of the Eden Mill Distillers Choice series of Scottish Gin expressions, Oak Old Tom Gin is the first release in the Distillers Choice series crafted by head distiller Scott Ferguson, released as a limited edition batch of only 650 bottles. Scott was the third person to join the Eden Mill distilling team and has been at the distillery since 2012. Inspired by the Eden Mill Oak Gin, Scott used the same American Oak chips to impart flavours in this Oak Old Tom Gin. The result is a sweeter style of gin that has notes of creamy vanilla, some earthiness and wood from the oak along with aromatic spice from cassia and a light, peppery finish.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Red Snapper Gin was inspired by both the cocktail which is a Bloody Mary made with Gin instead of vodka and the tale of the feuding princesses, Mary Queen of Scots and Queen Elizabeth of England. Both queens were prominent historical figures, both fiery and fierce just like the Red Snapper cocktail. Distilled with tomatoes, chilli and angelica, the gin has a savoury flavour profile that meddles notes of fruit and spice with a slight sweetness on the palate.

Part of the Eden Mill Distillers Choice series of Scottish Gin expressions, Red Wine Cask Aged Gin is a limited edition batch of only 600 bottles. The signature Eden Mill Original Gin has been rested for 15 months in an Italian Red Amarone cask. The red wine cask was selected by senior distiller Andrew Walker. Created as a partner gin to the White Wine Cask Aged Gin, with both gins created to be tasted side by side to show the influence of the cask ageing process. The red wine cask imbues some aromatic flavours of red berries with notes of vanilla and cassia spice. On the nose, red berry fruity aromas and on the palate, hints of raspberries and cassia with a light, sweet vanilla and oak character on the finish.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Rosa Rosa Gin features the cycle of roses blooming. The distillation uses rosehips from the Dog Rose and rose florals from Rosa Damascena along with a variety of summer fruits. The result is like stepping into a summer rose garden with notes of cherry blossom and other florala on the nose. Aromatic and slightly candied on the palate along with a light spice, the gin has light rose perfume on the nose.

Part of the Eden Mill Premium Gin range of Scottish Gin expressions, Serendipity Gin features dandelion, burdock and liquorice root as three of the key botanicals that make up this intense, herbaceous, savoury gin. Inspired by the earliest account of the dandelion and burdock drink, St Thomas Aquinas. Thomas, an Italian Dominican friar and philosopher was struck by writers block. He went for a walk to gather his thoughts and developed a thirst and decided to make a drink using the first plants he came across - dandelion and burdock. These two botanicals give the gin a root-beer-esque character. Sweet and rooty on the nose, the gin has a floral hint on the palate before developing into a sweet root beer flavour profile finishing with a light sweetness and hint of spice.

The signature Eden Mill Original Gin has been rested for 15 months in a French White Burgundy Cask. The white wine cask was selected by head distiller Scott Ferguson. Created as a partner gin to the Red Wine Cask Aged Gin, with both gins created to be tasted side by side to show the influence of the cask ageing process. The white wine cask complements the flavours of the citrus gins, adding tropical peach and apricot flavours to the gin. On the nose, fruity aromas and on the palate, tropical and stone fruit, reminiscent of lychee and apricot with zesty, fruity and aromatic notes on the finish.

Created in collaboration with multi-Michelin star chef Gordon Ramsay, and featuring a range of locally grown botanicals from around the Eden Mill Distillery, Ramsay’s Gin Recipe No.1 captures the landscape and larder of Scotland. Distilled using botanicals including juniper, honeyberries, pink peppercorns, fennel seeds, lavender, lemon verbena and sustainably harvested mara seaweed from the Fife coastline, the result is a gin that balances citrus, floral and savoury notes across the palate.

The new Eden Mill Distillery is currently under construction and due to open in 2021. The distillery will be Scotland’s first carbon neutral gin distillery. Eden Mill also offer two gin making experiences at their Blendworks workshops in St Andrews and Glasgow where visitors can learn more about the history of gin, Eden Mill and create their own blended gin using a variety of pre-made distillates.
