Tom and Lisa Lewis came up with the concept for their gins one November afternoon after discussing their love of food and flavours. Both chefs by profession and owners of the Mhor 84 motel, the couple’s idea was simple: create a series of Scottish Gins that used single plant distillates that could be blended to create a flavour profile for each gin that provided strong flavour notes whilst still being delicate and balanced.
Hamish Martin from The Old Curiosity Distillery on the outskirts of Edinburgh provided the couple with access to the many herbs and plants growing in the Secret Herb Garden, part of The Old Curiosity Distillery. After blind-nosing over 40 individual plant distillates, the couple choose three botanical distillates for each gin.
