One of the oldest names in Scottish distilling, John Crabbie & Co. was established in Leith, Edinburgh in 1801. Considered a pioneer of his time, John Crabbie produced a range of spirits and drinks including whisky, gin and ginger wine. John Crabbie & Co. was also one of the first independent bottlers of whisky.

Fast forward over 200 years and the legacy of innovation and quality continues to this day. With their gins currently being distilled in their micro distillery in Edinburgh, a new distillery is set to open near the site of the company’s original Leith premises and will provide production facilities for a variety of spirits including whisky and gin.

Crabbie's 1837 Gin

Crabbie’s 1837 Gin has been recreated using a recipe discovered in the archives of John Crabbie & Co. Using the original recipe as inspiration with a modern twist, this is a classic London Dry Gin. The original recipe included sea salt, which has been sourced from a producer on the Isle of Skye and helps balance the flavour profile and adds to the depth of flavour. Botanicals used include juniper, coriander, celery seeds, grains of paradise and Isle of Skye sea salt creating a piney juniper flavour combined with a deep, zesty orange marmalade note and a fragrant spicy finish.

Crabbie's 1891 Old Tom Gin

A barrel aged Old Tom style of gin, this gin is aged in ex-sherry casks with the addition of orange, coriander and angelica added to create a sweet, citrus balance to the flavour profile. The gin is left to age for a period of time before being bottled at 43% vol. Dry juniper is balanced with sweet orange and notes of sherry from the ageing process combined with notes of wood and fragrant spices with coriander notes that linger on the finish.

Crabbie's 'Jack' Crabbie Raspberry & Ginger Gin

An official collaboration with Scottish Rugby, Crabbie’s ‘Jack’ Gin is named after founder John Crabbie’s grandson, Jack, who played for the national Scottish rugby team in the early 1900’s. Based on Crabbie’s 1837 gin recipe, which was discovered in a long lost journal belonging to John Crabbie, this Raspberry & Ginger Gin has been infused with raspberries and ginger. A vibrant, fruity pink gin filled with delicious flavours and bursts of raspberries and spicy, warming ginger. Classic gin botanicals still play a role with hints of juniper, orange peel and coriander.

Crabbie's 'George' Crabbie Citrus Orange Gin

An official collaboration with Scottish Rugby, Crabbie’s ‘George’ Gin is named after founder John Crabbie’s grandson George, who played for the national Scottish rugby team in the early 1900’s. This new gin was developed by head distiller Marc, ultimately creating an entirely original citrusy London Dry gin. Zingy citrus notes combine with bright orange flavours delicately balanced with herbaceous notes of bay and rosemary. Classic gin botanicals still play a role with hints of juniper, angelica and coriander.

The Chain Pier Distillery

The Chain Pier Distillery in Leith is the temporary home for the distillation of the John Crabbie & Co. range of whiskies and gins. Most famous for his involvement in the world of Whisky and his ginger wine, Miller Crabbie was a merchant in Edinburgh before his son John Crabbie inherited the business. John Crabbie was a pioneer of spirits whose involvement with business began in Leith when he inherited his father’s business. Working in Leith, which at the time had one of Scotland’s busiest ports, John soon found a market for some of the exotic botanicals and drinks that were being shipped to Leith from all four corners of the world. Currently under construction in Leith is the John Crabbie & Co. whisky and gin distillery, which once complete will be the official home and distillery for the brand.
