The team from Lundin Distilling put a raspberry twist on the more traditional Tom Collins in our latest Shaken & Stirred feature, resulting in this Raspberry Ripple cocktail. Using their Ripple Gin as a base, which is infused with Scottish berries, distiller Iain says the bigger, brighter flavours in this fruit gin lend themselves well to cocktails as they really hold their own against the bold, complementary flavours in a cocktail such as this.
Here’s what you need to know…
• 50ml Ripple Scottish Berry Infused Gin
• 25ml Sugar syrup
• 20ml Lemon juice
• 100ml Soda
• 4 Raspberries
These measures are a guide only and can be tailored to suit your own personal taste.
Muddle 3 of the raspberries in a mixing glass. Add ice, gin, sugar syrup, lemon juice and stir. Add the soda water and double strain into an ice-filled highball glass. Finally, garnish with the remaining raspberry.
