With the frequent cold weather and our family ties to Barbados, we thought it fitting to bring a little Caribbean sunshine to Scotland with this sweet and moreish Gin Rummy cocktail. For our Scottish Gin we went with Makar Oak Aged Gin from The Glasgow Distillery Co.. We used Peter Spanton No. 6 London Soda to top up.
These measurements are a guide only and you should adjust to suit your own taste.
Place the gin, rum, brown sugar, lime juice and pineapple juice into an ice filled cocktail shaker and shake until well frosted. Strain into an ice filled glass and top up with as much soda water as you wish. Garnish with a mango slice and a grinding of black pepper.
