In our Shaken & Stirred series, we ask Scotland’s Gin makers what cocktail works perfectly with their Scottish Gin and, just as importantly, how can we make it at home?
In our latest feature we asked Jenny McKerr, founder and distiller at The Wee Farm Distillery which cocktail we should be checking out. Jenny recently collaborated with Pure Bartending at their local gin club where they created a variety of Wee Farm cocktails, using their diverse range of Scottish Gins and Scottish Gin based Liqueurs. Here is the classic Clover Club cocktail, one of the cocktails that was created and uses The Wee Farm Distillery signature Drovers Gin.
The Clover Club Cocktail dates back to the late 1800s, first appearing in a fashionable pre-prohibition hotel, which housed an all male salon, established by lawyers, bankers and writers, hosting ‘The Clover Club’. This cocktail fell out of fashion for a long time but was rediscovered as a classic in recent decades. We recommend making your own home made raspberry syrup or simply muddle a few fresh raspberries with normal sugar syrup.
• 60ml Drovers Gin
• 15ml Lemon juice
• 15ml Raspberry syrup
• 1 Egg white
• Fresh raspberry, to garnish
These measures are a guide only and can be tailored to suit your own personal taste.
Dry shake all ingredients until well mixed then add ice and shake again until chilled. Strain into a chilled martini (or coupe) glass and garnish with a fresh raspberry.
